- 500 g linguine
- 3 eggs
- 2-3 tablespoons black truffle oil (to taste)
- 200 ml double cream
- 30 g grated Parmesan cheese
- Salt and pepper
Preparation
- Cook the linguine in a pan of boiling water according to the instructions on the packaging.
- Break and beat the eggs in a bowl. Add the truffle oil, cream and grated Parmesan. Season to taste.
- Drain the pasta. Place in a frying pan and heat over a medium heat.
- Add the egg mixture and cook for 2 minutes, stirring constantly (the eggs should not be overcooked).
- Tip: you can use white truffle olive oil for a milder truffle flavour.
