    Mushrooms

What are you best use by dates?
This depends on the product. For mushrooms, the average use by date is 2 years. For the majority of other products, they are at least one year.
When opening cellophane packaging for dehydrated mushrooms, what sort of container can I use for storage?
You can either re-use the cellophane packet making sure it is well sealed, or store your mushrooms in a glass or Tupperware container, at room temperature, away from humidity and sunlight.
How should mushrooms stored in jars and tins be cooked?
Always follow the instructions marked on all of our packaging.
What are the differences between tinned and dehydrated mushrooms?
Dehydrated mushrooms will have more flavour than tinned mushrooms as this storage method is much more natural and has little to no effect on the flavour. Dehydrated mushrooms mush be rehydrated before use and require a little more time than tinned mushrooms before they can be cooked. Tinned products are much more practical and easier to use and to always keep in the pantry for a quick and tasty meal.
Do you have any recipe ideas using mushrooms?
Yes. A wide selection of recipe ideas are on our website.
What are the differences between the "Trompette de la mort", the "Trompette des morts" or the "Trompette des Maures" mushroom varieties?
The name "Trompette de la mort" comes from the period when it grows. In actual fact the trompette de la mort grows in Autumn, around All Saint’s, which is the holiday of the dead.

"Trompette de la mort", "Trompette des morts" or "Trompette des Maures"? When Alexandre Borde first founded our company, he decided to sell the trompette de la mort, which translates as the trumpet of death. However, he found it a little difficult to sell an edible mushroom with such a name. Due to his family ties in the Nice region, he often visited Les Maures mountains to collect wild mushrooms.

At the time, a lot of "Trompettes de la mort" grew in these mountains. So the choice of calling them Morts or Maures was easy to make, and Alexandre Borde decided to call them "Trompettes des Maures"!

What is the difference between a coulis and "Fumet" mushroom stock? How long and how can you keep them after opening?
Coulis is a concentrated mushroom flavour which can be diluted in your favourite dishes including risotto, gravies, soup, pasta, mash, sautéed vegetables, sauce, etc. You only need to use a very small amount (1 or 2 tea spoons on average or for more flavour around 5% to 12% of coulis).

Stock is an infusion made using dehydrated mushrooms and is 100% natural. It is not quite as strong as coulis, and is perfect for cooking pasta, rice, vegetables or other vegetarian dishes, risottos, sauces or to enhance the flavour of soups.

Once open, coulis and stock can be kept refrigerated for up to 7 days. You can keep them for longer either by freezing them in ice cube trays (for the mushroom stocks) or by preparing different dishes which you can then freeze (for the coulis).
How to use our powders mushroom and granules mushrooms?
Granules mushrooms are dried mushrooms reduced to tiny portions. Use directly in your preparations without rehydration. The granules are ideal for savoury dishes such as pasta, soups, sauces, stuffings and many other recipes.

Mushroom powders can be used in the same way as spices. They are just as flavoured as the granules and can also be eaten without rehydration. You can use our mushroom powders to flavour all your dishes: soups, sauces, pasta, potato gratins, omelettes, quiches, pizzas...
    Why do you import mushrooms?
Our mushrooms are all wild, and therefore grown and collected by hand. Harvests are not always reliable as they depend largely on the weather conditions. As a result, we have to import some mushroom varieties during the year as French mushrooms do not grow in sufficient quantities to cover the requirements on the French market. However, with mushrooms, there is also a notion of regional flavour variety. A porcini grown in a deciduous forest in Romania will have a stronger flavour than one grown in the Auvergne region and both have a unique flavour profile.
How do you rehydrate dehydrated mushrooms*?
Soak dehydrated mushrooms in a cup of tepid water for at least 15 minutes. Rinse them off thoroughly to get rid of any dirt and then place them in boiling water for 1 minute. You can now cook your mushrooms, which must be hot through before eating. They can be cooked just like fresh mushrooms.

Tip no. 1: Keep the water used to soak the mushrooms and filter it, before then adding to your sauces, soups or when cooking other ingredients (pasta, rice, etc.).

Tip no. 2: You can also rehydrate dehydrated mushrooms in warm milk, which will make them more unctuous and the milk used for soaking can also be used just like water.

    *All varieties
What is the difference between a dehydrated mushroom and a fresh mushroom?
Dehydrated mushrooms have been dried immediately after harvesting. This helps them to retain their taste and flavour and to be stored for much longer (up to several years). Inversely, fresh mushrooms need to be used quickly or stored refrigerated for 2 to 3 days.
What is the equivalent quantity between dehydrated and rehydrated mushrooms?
The rehydration levels of dehydrated mushrooms are as follows:

    • Porcini: x4 (40 g of dehydrated porcini = 160 g of rehydrated porcini)

    • Chanterelles: x3 (30 g of dehydrated chanterelles = 90 g of rehydrated chanterelles)

    • Morels: x4 (25 g of dehydrated morels = 100 g of rehydrated morels)

    • Forest mushroom mix: x5 (30 g of dehydrated forest mushroom mix = 150 g of rehydrated forest mushroom mix)

    • Black trumpets: x4 (30 g of dehydrated black trumpets = 120 g of rehydrated black trumpets)

    • Fairy ring mushrooms: x5 (30 g of dehydrated fairy ring mushrooms = 150 g of rehydrated fairy ring mushrooms)

    • Cloud ear: x7 (30 g of dehydrated cloud ear = 210 g of rehydrated cloud ear)

    • Shiitake mushrooms: x5 (30 g of dehydrated shiitake mushrooms = 150 g of rehydrated shiitake mushrooms)
What is the equivalent quantity between dehydrated and fresh mushrooms?
You need around 1 kg of fresh mushrooms to have 100 g of dehydrated mushrooms.
