Ingredients (4 servings)

  • 500 g linguine
  • 3 eggs
  • 2-3 tablespoons black truffle oil (to taste)
  • 200 ml double cream
  • 30 g grated Parmesan cheese
  • Salt and pepper

Preparation

  1. Cook the linguine in a pan of boiling water according to the instructions on the packaging.
  2. Break and beat the eggs in a bowl. Add the truffle oil, cream and grated Parmesan. Season to taste.
  3. Drain the pasta. Place in a frying pan and heat over a medium heat.
  4. Add the egg mixture and cook for 2 minutes, stirring constantly (the eggs should not be overcooked).
  5. Tip: you can use white truffle olive oil for a milder truffle flavour.
