Tortilla with forest mushrooms

Ingredients (6 servings)
- 4 potatoes
- 1 onion
- Olive oil
- 200g Borde frozen wild mushrooms mix
- 1 garlic clove, chopped
- Salt and pepper
- 1 tablespoon mushroom powder
- 2 diced tomatoes
- 1 pinch chilli
- 6 eggs
Preparation
- Wash and cook the potatoes with the skin. Once cooked, peel them and cut into 1cm x 1cm cubes.
- Peel and chop the onion.
- Sweat the onion in the olive oil. Set aside.
- In a frying pan, fry the Borde frozen wild mushrooms mix in olive oil with the garlic and season.
- Add the onions, diced tomatoes and potatoes once the mushrooms are cooked.
- Beat the eggs and Espelette pepper in a small bowl. Check the seasoning.
- Add the mixture to the frying pan, beating in the wild mushrooms mix mushrooms, onions, tomatoes and potatoes.
- Cook until crusty and place in the oven for 4 minutes at 180°C.
