Ingredients (6 servings)

  • 4 potatoes
  • 1 onion
  • Olive oil
  • 200g Borde frozen wild mushrooms mix
  • 1 garlic clove, chopped
  • Salt and pepper
  • 1 tablespoon mushroom powder
  • 2 diced tomatoes
  • 1 pinch chilli
  • 6 eggs

Preparation

  1. Wash and cook the potatoes with the skin. Once cooked, peel them and cut into 1cm x 1cm cubes.
  2. Peel and chop the onion.
  3. Sweat the onion in the olive oil. Set aside.
  4. In a frying pan, fry the Borde frozen wild mushrooms mix in olive oil with the garlic and season.
  5. Add the onions, diced tomatoes and potatoes once the mushrooms are cooked.
  6. Beat the eggs and Espelette pepper in a small bowl. Check the seasoning.
  7. Add the mixture to the frying pan, beating in the wild mushrooms mix mushrooms, onions, tomatoes and potatoes.
  8. Cook until crusty and place in the oven for 4 minutes at 180°C.
