- 30 g dried Borde porcini mushrooms
- 500 g potatoes
- 100 ml cream
- 50 ml milk
- 40 ml hazelnut oil
- 100 g butter
- Salt/pepper
Preparation
- Grind 8g of dried porcini mushrooms in a coffee grinder to obtain a very fine powder.
- Cook the potatoes in water with the skin on.
- Meanwhile, boil the cream, milk, hazelnut oil, porcini powder, butter mixture.
- Peel the cooked potatoes and mash them with a food processor in the porcini cream.
- Check the seasoning. Serve with fish or meat.
