Ingredients (4 servings)

  • 30 g dried Borde porcini mushrooms
  • 500 g potatoes
  • 100 ml cream
  • 50 ml milk
  • 40 ml hazelnut oil
  • 100 g butter
  • Salt/pepper

Preparation

  1. Grind 8g of dried porcini mushrooms in a coffee grinder to obtain a very fine powder.
  2. Cook the potatoes in water with the skin on.
  3. Meanwhile, boil the cream, milk, hazelnut oil, porcini powder, butter mixture.
  4. Peel the cooked potatoes and mash them with a food processor in the porcini cream.
  5. Check the seasoning. Serve with fish or meat.
