Ingredients (8 servings)

  • 1kg Borde frozen chanterelles
  • 20ml olive oil
  • 8 eggs
  • 20g butter
  • 2 garlic cloves
  • 1L Borde chanterelles juice
  • Parsley
  • Salt/ pepper

Preparation

  1. Sweat the chanterelles in olive oil until they have lost their water, then remove.
  2. Poach the eggs in boiling water for 2 minutes.
  3. Fry the chanterelles in butter and chopped garlic.
  4. Add the chopped parsley at the end.
  5. Place the chanterelles in the plate, the egg on top and pour the hot chanterelle juice over the entire preparation.
