Ingredients (8 servings)
- 1kg Borde frozen chanterelles
- 20ml olive oil
- 8 eggs
- 20g butter
- 2 garlic cloves
- 1L Borde chanterelles juice
- Parsley
- Salt/ pepper
Preparation
- Sweat the chanterelles in olive oil until they have lost their water, then remove.
- Poach the eggs in boiling water for 2 minutes.
- Fry the chanterelles in butter and chopped garlic.
- Add the chopped parsley at the end.
- Place the chanterelles in the plate, the egg on top and pour the hot chanterelle juice over the entire preparation.
