Ingredients (4 servings)

  • 200 g Borde white mushrooms
  • 1 shallot
  • Olive oil
  • 2 tablespoons balsamic vinegar
  • 60 ml single cream
  • 60 g Auvergne blue cheese
  • Pepper
  • Fresh chives

Preparation

  1. Drain the white mushrooms. Rinse and drain them again.
  2. Heat some olive oil in a frying pan.
  3. Add the chopped shallots and brown until golden. Stir in the mushrooms until all the water has evaporated.
  4. Deglaze with the balsamic vinegar. Brown the mixture for a few minutes.
  5. Add the blue cheese and cream. Melt everything together.
  6. Season with pepper and mix.
  7. Leave to cool, then blend.
  8. Place the cream in a bowl and put it in the fridge for 30 minutes.
  9. Add the fresh chives just before serving.

If you do not have all the ingredients on hand, you can replace them with other ingredients you have on hand.
