Ingredients (4 servings)
- 200 g Borde white mushrooms
- 1 shallot
- Olive oil
- 2 tablespoons balsamic vinegar
- 60 ml single cream
- 60 g Auvergne blue cheese
- Pepper
- Fresh chives
Preparation
- Drain the white mushrooms. Rinse and drain them again.
- Heat some olive oil in a frying pan.
- Add the chopped shallots and brown until golden. Stir in the mushrooms until all the water has evaporated.
- Deglaze with the balsamic vinegar. Brown the mixture for a few minutes.
- Add the blue cheese and cream. Melt everything together.
- Season with pepper and mix.
- Leave to cool, then blend.
- Place the cream in a bowl and put it in the fridge for 30 minutes.
- Add the fresh chives just before serving.
If you do not have all the ingredients on hand, you can replace them with other ingredients you have on hand.
