  • 1 shortcrust pastry (bought or home-made)
  • 240 g Borde red fruit
  • 2 eggs
  • 125 g almond powder
  • 85 g icing sugar (5 g for decoration)
  • 80 g butter
  • Chantilly cream (bought or homemade)

Preparation

  1. Preheat the oven to 180°C.
  2. Roll out the pastry, place it in the pie dish and prick it with a fork.
  3. Drain the red fruits. Spread them over the tart.
  4. Break the eggs into a bowl and whisk them. Add the almond powder, icing sugar, melted butter and mix.
  5. Pour the mixture over the tart base with the red fruits and spread it homogeneously.
  6. Fold the edges of the pastry inwards.
  7. Bake for 30 minutes.
  8. Leave to cool and sprinkle with icing sugar reserved for the dressing.
  9. You can enjoy the tart with homemade whipped cream or vanilla ice cream.
  10. Tip: keep the syrup from the red fruits and reuse it for your cocktails or sweet preparations (yoghurts, smoothies, coulis, etc.).
