Ingredients (6 servings)

  • 1kg Borde frozen porcini
  • 1/2 bunch parsley, finely minced
  • 50g butter
  • 4 garlic cloves, minced
  • Salt/pepper

Preparation

  1. Mince the garlic and chop the bunch of parsley.
  2. In a skillet, melt the butter and add the garlic and parsley, stirring for 1 minute.
  3. Add the frozen porcini Borde them and add the water to the skillet. Stir continuously until all the water is absorbed.
  4. Remove from heat, salt and pepper to taste, and serve.
  5. Tip: the persillade can be served on its own as an accompaniment to your meal, makes an excellent topping tossed in pasta dishes, or can be blended with heavy cream for a full flavored white sauce for meat dishes.
