PORCINI AND CHESTNUTS VELOUTÉ :
- 1 onion
- 100 g (3.5 oz) of cooked peeled chestnuts
- 15 cl (½ cup) of poultry broth
- 20 cl (1 cup) of cream
- 10 g (0.35 oz) of Borde porcini coulis
PORCINI CAPPUCCINO :
- 15 cl (½ cup) of cream
- 10 g (0.35 oz) of Borde porcini coulis
- Salt/pepper
Preparation
PORCINI AND CHESTNUTS VELOUTÉ :
- Slice the onion thinly, sweat it then add the chestnuts. Moisten with the poultry broth. Add the cream, let it reduce on a low heat then mix.
- Add the porcini coulis at the end of the cooking. Season.
PORCINI CAPPUCINO :
- Mix the cream and the porcini coulis in a pot. Bring it to a boil.
- Put the mixture in a whipping siphon. Add two cartridges then keep it refrigerated.
