SHOPPING LIST
INGREDIENTS (2 BURGERS)
- 175 g Borde preserved oyster mushrooms
- Olive oil
- 1 shallot
- 1 teaspoon smoked paprika
- 1 teaspoon cane sugar
- 2 tablespoons barbecue sauce
- 75 ml water
- Salt and pepper
- Butter
- 2 burger buns
- Salad leaves
- 1 red onion
PREPARATION
- Drain the oyster mushrooms and rinse them. Shred them with a fork to create long strands, like pulled pork.
- Heat some olive oil in a frying pan and fry the finely chopped shallot until golden.
- Add the shredded oyster mushrooms. Fry them until they have released all their moisture and are thoroughly cooked.
- Add the smoked paprika, cane sugar and the barbecue sauce diluted with water.
- Cook for 15–20 minutes, stirring regularly. The sauce should coat the mushrooms well. Set aside.
- In another frying pan, melt some butter and brown the burger buns. Spread some barbecue sauce on the buns.
- Assembling the burgers: add the piping hot shredded oyster mushrooms. Add a lettuce leaf and the red onion, sliced into rings. Add the top bun.
- Serve with a green salad or homemade chips.
- Tip: for an even more indulgent treat, add some melted cheese – such as Cheddar, Emmental or Comté – and other raw vegetables of your choice.
