INGREDIENTS (2 SERVINGS)
- 1 tablespoon of green pepper Borde from Madagascar
- 25 g of butter
- 1 shallot
- 1 tablespoon of cognac
- 100 ml of beef stock
- 200 ml of liquid cream
- Salt
PREPARATION
- Drain the canned green peppercorns and lightly crush the berries using a pestle or the back of a spoon to release their aroma.
- In a frying pan, melt the butter over medium heat. Add the chopped shallot and sauté for 2 to 3 minutes, until it becomes translucent and slightly golden.
- If using cognac, pour it into the pan to deglaze the shallot and flambé for a few seconds (or allow it to reduce if you prefer not to flambé).
- Add the crushed green pepper to the pan and mix well. Next, pour in the beef stock and allow it to reduce slightly over medium heat for 5 minutes.
- Lower the heat and pour the liquid cream into the pan. Stir well to create a smooth and homogenous sauce. Let it simmer for 5 to 10 minutes, until the sauce thickens at your convenience.
- Taste and adjust the seasoning with salt according to your preference.
- Serve this creamy green pepper sauce over a steak, filet mignon, veal escalopes, or even grilled vegetables to add a gourmet touch to your dishes.
