Picked in spring, the morel is one of the mushrooms that appears earliest in the forest. It generally grows in the spring under deciduous or coniferous trees, and particularly likes bright undergrowth. Our 'Roi des Montagnes' dried morels have a delicate, refined flavour. They will add a subtle flavour to a mushroom sauce, accompany white meats and go perfectly with asparagus or peas.
