Picked in spring, the morel is one of the mushrooms that appears earliest in the forest. It generally grows in the spring under deciduous or coniferous trees and particularly likes bright undergrowth. Morels add a subtle flavour to a mushroom sauce, go well with white meats and are perfect with asparagus or peas.
