Ingredients (2-3 servings)

  • 2 courgettes
  • 200 g Borde mushroom duxelle
  • 1 shallot minced
  • 20 cl liquid cream
  • 30 g of butter
  • Parsley

Preparation

  1. Wash the courgettes, cut into pieces about 5 to 6 cm and dig them with a small spoon. You can make sections of different sizes.
  2. Prepare your sauce. For that melt the butter in a saucepan.
  3. Mince the shallot and brown in butter. Add the mushroom duxelle and cook on a low heat for 2 to 3 minutes. Add the cream and chopped parsley.
  4. Cook your pieces of courgettes for 5 minutes in simmering water. Remove them from the water and let them drip.
  5. Arrange courgettes on a plate and garnish with the prepared sauce.
  6. You can add a pan of chanterelles to accompany the courgettes.
