Ingredients (2 servings)

  • 20 cl of Borde chanterelle juice
  • 500 g of liquid cream
  • 1 shallot
  • 4 gambas
  • Shrimp bisque
  • Salt/pepper

Preparation

  1. In a whipper-cream dispenser, put the chanterelle juice and liquid cream, season lightly (pepper and salt). Stir and put the whipper-cream dispenser in the refrigerator for ½ hour.
  2. Shell the prawns leaving the shell on the tail. Incise the back and fry for 2 minutes in a hot pan with a little butter.
  3. Arrange shrimp bisque in a verrine and add with the wipher-cream dispenser, cream on.
  4. Serve by placing your prawns on a board with the verrine.
  5. Tips : to decorate your preparation, you can add whole peppercorns and patchoid cabbage leaves.
