Ingredients (2 servings)
- 20 cl of Borde chanterelle juice
- 500 g of liquid cream
- 1 shallot
- 4 gambas
- Shrimp bisque
- Salt/pepper
Preparation
- In a whipper-cream dispenser, put the chanterelle juice and liquid cream, season lightly (pepper and salt). Stir and put the whipper-cream dispenser in the refrigerator for ½ hour.
- Shell the prawns leaving the shell on the tail. Incise the back and fry for 2 minutes in a hot pan with a little butter.
- Arrange shrimp bisque in a verrine and add with the wipher-cream dispenser, cream on.
- Serve by placing your prawns on a board with the verrine.
- Tips : to decorate your preparation, you can add whole peppercorns and patchoid cabbage leaves.
