Ingredients (6 servings)
- 1 roll puff pastry or homemade shortcrust pastry
- 30 g Borde dried fairy ring mushrooms
- 200 g smoked bacon
- 3 eggs
- 20 cl liquid cream
- 100 g grated gruyère
- 1 garlic clove
- Salt/pepper
Preparation
- Preheat oven to 180°C.
- Place the dough in the mould.
- Rehydrate the dried fairy ring mushrooms by following our instructions on the packaging. Drain them.
- In a bowl, beat eggs and liquid cream.
- Sauté the bacon and fairy ring mushrooms in a frying pan without adding any fat. Add the finely chopped garlic and pepper to taste.
- Once the bacon and mushrooms are cooked, place them in the bottom of the pie.
- Pour the cream and egg mixture on top. Sprinkle with gruyère.
- Bake the quiche for about 30 minutes at 180°C.
- Tip: you can opt for any kind of garnish on this recipe. Always sauté the fairy ring mushrooms before adding them to your garnish, to ensure that they lose all their water.
