Ingredients (4 personnes)

  • 30 g Borde freeze-dried morels (1 jar)
  • 1,5 L single cream
  • 2 shallots
  • 80 ml of yellow wine
  • 80 g of butter
  • 5 thick slices of brioche
  • Salt/pepper

Preparation

  1. Chop the shallots and sweat it in butter in a saucepan. Deglaze with yellow wine.
  2. Add the freeze-dried morels without rehydrating and cook for 2-3 minutes, stirring occasionally.
  3. Add the cream, season and reduce.
  4. Once the mixture is smooth, toast the brioche slices in a buttered frying pan or toaster.
  5. After adjusting the seasoning if necessary, place the creamy morels preparation in a shallow dish and place the toasted brioche slices on the edge of the plate.
  6. Ready to serve!
