Ingredients (4 personnes)
- 30 g Borde freeze-dried morels (1 jar)
- 1,5 L single cream
- 2 shallots
- 80 ml of yellow wine
- 80 g of butter
- 5 thick slices of brioche
- Salt/pepper
Preparation
- Chop the shallots and sweat it in butter in a saucepan. Deglaze with yellow wine.
- Add the freeze-dried morels without rehydrating and cook for 2-3 minutes, stirring occasionally.
- Add the cream, season and reduce.
- Once the mixture is smooth, toast the brioche slices in a buttered frying pan or toaster.
- After adjusting the seasoning if necessary, place the creamy morels preparation in a shallow dish and place the toasted brioche slices on the edge of the plate.
- Ready to serve!
